This week, I decided to make something that doesn’t require a lot of effort or concentration. Plus, Trader Joe’s has their vegan marshmallows back in stock for the season! (Score!) So I decided to make a classic that’s sure to bring out the inner child in you. I’m making Rice Krispie Treats with a twist. There are so many amazing cereals out there that are just dying to be made into these delicious treats. (I know because they told me in the cereal aisle.) I wanted something fruity, which is why I choose Fruity Pebbles, plus they’re accidentally vegan. And then I decided to get Peanut Butter Captain Crunch, also accidentally vegan. Fruity Pebble “Rice Krispie” Treats
Ingredients:
1 1/2 tbsp vegan butter
1/2 pkg vegan marshmallows
3 c fruity pebble cereal (or whatever kind you want)
Directions:
Line an 8x8 or 9x9 pan with wax paper, set aside
In a medium size sauce pan, add the butter and marshmallows
*Place over medium - high heat and stir occasionally until it’s melted
Remove from the heat and quickly mix in the salt (optional) and the cereal
Place in the fridge for 15 minutes and enjoy
Peanut Butter “Rice Krispie” Treats
Ingredients:
2 tbsp peanut butter
1 tsp vegan butter (if the mixture seems dry)
1/2 pkg vegan marshmallows
3 c Peanut Butter Captain Crunch Cereal
Directions:
Line an 8x8 or 9x9 pan with wax paper, set aside
In a medium size sauce pan, add the peanut butter, butter (optional) and marshmallows
*Place over medium - high heat and stir occasionally until it’s melted
Remove from the heat and quickly mix in the cereal
Place in the fridge for 15 minutes and enjoy
*If you want, you can also place all the ingredients in a bowl and microwave the marshmallows for about 30 second increments until the mixture is melted.
