Vegan Peanut Butter Pie

Do you ever have a recipe that you really want to make, but the time is never quite right? Either you don’t have time to make it, or one of the main ingredients? That was this recipe for me. I loved Peanut Butter Pie before I went vegan. And I’ve wanted to make one since going vegan. But I never had sweet and condensed milk, or vegan cookies, or both. But the stars finally aligned, or should I say, I finally had all the ingredients all at once. And here we are! 🥳 I just so happened to have some Halloween Joe Joe cookies (no, I didn’t just buy them. I’ve had them for almost over a year. 😅) and I also had some homemade sweetened condensed milk. The recipe for the sweetened condensed milk is from Pick Up Limes. I also had a whole day off with no plans, and I thought, “This is the moment. It’s now or never.”


And boy of boy am I glad I did because this pie is easy to make and SO sweet!! 😋 Almost a little too sweet tbh. But it’s definitely a crowd pleaser.


So without further to do, I give you, Vegan Peanut Butter Pie!


 


 


 

Ingredients:


Crust:

1 1/2 c cookie of your choosing*

3 tbsp granulated sugar

6 tbsp vegan butter (I used Earth Balance, but use your favorite)


Filling:

1/2 c vegan butter

1/2 c creamy peanut butter

14 oz can coconut sweetened condensed milk**

1 tsp vanilla extract


Notes:

*I used Joe Joe’s cookies which is a knock off version of Oreos

**I made my own, and you can too if you want. It’s really easy. Here is the recipe.


Directions:


Pie Crust:

  1. Heat the oven to 350 degrees F

  2. Grease a 9 inch pie pan with butter or non-stick cooking spray and set aside

  3. In a bowl or a food processor, add the cookies. (If you are using Oreos or a cookie with a filling, take the filling out and use for something else.)

  4. Crush the cookies into small pieces, the smaller the better so you’ll get an even crust

  5. Add in 3 tablespoons of sugar and mix until well combined. (If you’re using a food processor, make sure you don’t let it mix too long or you will end up getting cookie butter)

  6. Melt the butter and add it into the mixture and mix until well combined

  7. Pour the crust into the pan and press the crumbs evenly around the pan and up the sides with your hands, spoon, or spatula

  8. Bake for 8 - 10 minutes or until you can smell the cookie crust

  9. Take it out and let it cool

  10. Meanwhile, make the filling


Filling:

  1. In a saucepan over medium heat, melt the 1/2 cup of butter

  2. Once it’s completely melted, add in the peanut butter and mix until well combined

  3. Add in the sweetened condensed milk and vanilla and stir to fully incorporate

  4. Let the mixture come to a boil for 3 - 4 minutes while stirring it every so often so the mixture doesn’t burn

  5. Take the filling off the heat, and pour into the baked and cooled pie crust

  6. Smooth it out, and place the pie in the fridge for at least 1 hour or until it’s set (it won’t jiggle when you move it)

  7. Enjoy!
