These Lemon Snowball Cookies are a great additive to any Christmas cookie platter. Plus, they look like little snowballs to add even more festive feel. Plus, Dare I say it, there is such a thing as too much sugar and chocolate…? Kind of…? What I’m trying to say is it’s a great flavor to help spice things up.

Ingredients:
1 c vegan butter or coconut oil
1/2 c powdered sugar
1 tbsp lemon juice
Zest of one lemon
1 tsp lemon extract (optional, but very helpful bringing out the lemon flavor)
2 1/4 c flour
1/4 tsp salt
3/4 c powdered sugar (to coat the cookies)
Directions:
Cream the butter and sugar until smooth
Add in the lemon juice, zest, and extract and beat until well combined
Add the flour and salt and mix until just incorporated
Optional: place the cookies in the fridge for about 30 minutes (just know you’ll need to let it warm up before scooping it out)
Or you can scoop the cookies in tablespoon sizes onto an uncreased or parchment lined baking tray
Bake for about 12 - 14 minutes or until the bottoms are slightly golden brown
Let them cool for about 5 minutes then roll each cookie in the extra powdered sugar until it’s well coated and set on a cooling wrack
These do freeze well for up to 3 months
