It’s September, so that means we can make everything apple flavored right…? I hope so because these apple hand pies are so good! They’re great to hand out to people. I didn’t buy pastry like the magazine, so I used Mark Bittman’s How to Bake Everything.
The original-ish recipe from the magazine:
2 c peeled diced apples
1 tbsp brown sugar
1 tsp nutmeg
2 tsp cinnamon
1 tbsp lemon juice
Zest of 1 lemon
1 tsp corn starch
1/4 c cold water
1 17oz package of pastry (or make it yourself)
1/4 c plant based milk (optional)
Pastry
2 1/4 c flour
2 tsp sugar
1 tsp salt
2 sticks vegan butter, very cold
6 tbsp ice cold water
In a food processor, add the flour, sugar, and salt and mix it for a few seconds
Add the butter in and mix until it’s thoroughly combined and it looks like there are small pea sized pieces mixed throughout
Add in the ice cold water and mix until the dough starts to form into a ball
Take it out and separate the dough in two
Place each piece into a ziplock bag and press it into a disk shape
Either freeze the dough for 15 minutes or refrigerate it for 30 minutes
While that’s happening, peel and core the apples
In a bowl or a saucepan, add the apples, lemon juice, lemon zest (if you want to add it), cinnamon, and nutmeg
Mix until all the apples are covered with the sugar and spices
Put the mixture into a saucepan if you haven’t already done that, and put it on medium high heat
In a separate bowl, combine the 1/4 c water and 1 tsp of cornstarch and whisk it together
Add it to the apples, and stir until well mixed
Once the mixture starts boiling, and the mixture is thickening, you can take it off the heat and let it cool
Heat the oven to 375 degrees F
Line two baking sheets with parchment paper
Roll out the dough into a square and cut it into four smaller squares (you’ll repeat this step for the second disk)
Fill each square with about 2 tbsp of the filling in the middle of the square
Fold the pastry in half diagonally to form a triangle
Press the sides together with a fork, cut slits on the top, and brush the tops with the plant based milk
Bake the pies for about 18 - 20 minutes or until they’re golden brown on the edges and tops
