Vegan Funfetti Sugar Cookies anyone? These are seriously SO good! And they’re easy to make, so you can make them for a party or whenever a craving hits. I added sprinkles to it because why not? It adds some nice color. The recipe is from Mark Bittman’s How to Bake Everything.
Ingredients:
1 c softened coconut oil (or vegan butter)
2 c granulated sugar
1/4 c mashed banana
3 tsp baking powder
2 tsp vanilla extract
2 3/4 c flour
1/2 tsp salt
~2tbsp non diary milk
A butt ton of sprinkles (optional)
Directions:
Heat the oven to 350 degrees F
Mash about a half of a large banana until there are little to no clumps (it should be about a 1/4 c)
Add 1 tsp of baking powder to the banana mush and mix until thoroughly combined, set aside
In a separate bowl, mix the flour, salt, and 2 tsp of baking powder and set aside
In a bowl or stand mixer combine the coconut oil and sugar and mix until light and fluffy (this might take some time so be patient)
Add the banana mixture and vanilla to the oil and sugar and mix until fully incorporated
Add half of the dry ingredients and mix until slightly combined
Add 2 tbsp of non-dairy milk to the mixture
Once it’s slightly mixed together, add the rest of the flour mixture and mix until just combined (the mixture should be semi dry but be able to stick together when forming a ball)
If the mixture is too dry, add another tablespoon of non-dairy milk
Scoop onto baking trays and freeze for 8 minutes or longer
Bake for 9-12 minutes or until just barely golden brown on the edges or tops
Let cool, and enjoy!
