Vegan Double Chocolate Muffins

I decided on this recipe because A) It’s a delicious and an easy treat to make (Always a plus!), and B) I got CHOCOLATE SALT when I was on vacation. So Naturally I had to try it out. This recipe is from Mark Bittman’s How to Bake Everything.


 


 


 

Ingredients:

1/3 c neutral oil

1 1/2 c flour

1/2 c cocoa powder

3/4 c sugar

1 tbsp baking powder

1/2 tsp salt

2 tbsp ground flax seed

6 tbsp water

1 c plant based milk

1 tsp vanilla extract

1 c chocolate (chopped or chips whatever you prefer)


Directions:

Line or grease a muffin tin

Heat the oven to 350 F

In a separate bowl, mix the flax seeds an water together and set aside

Place the dry ingredients, flour, cocoa powder, sugar, baking powder, and salt, in one bowl, mix

The flaxseed mixture should be ready by now, so add in the rest of the wet ingredients, oil, milk, and vanilla in and mix until well combined

Mix the wet ingredients with the dry ingredients and stir until just combined (be careful not to overtax)

Add in the chocolate chips or choppings (yes it's a word... now) and fold it into the batter

Distribute the batter into the muffin tins and add some chocolate chips or choppings on top

Bake for 20-25 minutes or until an inserted toothpick comes out clean
