Vegan Do-Cake Pops

So I tried to use a cake box hack, and make donuts with a yellow cake box. But it didn’t quite turn out. I’m not sure why, well I’m pretty sure it’s because I accidentally put 3/4 c milk in and not 1 c. My bad. But like all good bakers, I adapted and made it work. So, I present to you, Do - cake pops! Ok I realize they’re essentially just cake pops, but it made me feel better I decided to pretend I came up with something new.


 



 



 

Ingredients:

1 Box cake mix (I used yellow cake mix but you can use whatever flavor you want)

1 “egg” Bob’s Red Mill Egg Replacer

1/4 c oil

1 c non dairy milk


Directions:

Heat your oven to 350 F

Grease a donut pan and set aside

Mix in all the ingredients in a large bowl - mix until just combined

Pour the batter into a piping bag and pipe the batter into the pan

Bake for about 15 minutes

Let cool and make the glaze


Glaze

2 tbsp vegan butter

1/4 c coca powder

2 1/2 tsp non dairy milk

1/2 tsp vanilla extract

~3/4 c powdered sugar


Melt the butter and then add the rest of the ingredients into the bowl and mix together


To make the do-cake pops:


Crumble the donuts into a bowl

Add in multiple scoops of glaze and mix it together (using your hands works best)

Keep adding glaze a little at a time and mixing until the batter sticks together but isn’t too wet

Once it feels right, form into balls, place on a plate or aluminum foil, and place in the freezer for about 10 - 15 minutes

Once they’re solid, glaze each pop, however you like, and add sprinkles

Set in the fridge for 10 minutes or until ready to eat
