Cinnamon Swirl Cookies anyone? Vegan of course.đ This idea was inspired by Sallys Baking Blog, which I will leave a link down below. But this is what I did to make my own version of it. I had issues with the sugar cookie recipe I used, but I figured Iâd leave it here in case anyone wanted to try it and see if they have better luck with it.
Sugar Cookies:
1 c coconut oil, softened
2 c granulated sugar
1 tbsp Bobâs Red Mill Egg Replacer
2 tbsp room temp water
2 tsp vanilla extract
2 3/4c flour
1 tsp baking soda
1/2 tsp salt
Directions:
In a separate bowl, add the egg replacer and the water, whisk together until well combined and set aside
In another bowl, add the dry ingredients and combine
In a stand mixer or bowl, add the coconut oil and sugar
Mix until the ingredients are incorporated and light and fluffy
Add in the egg replacer and vanilla and mix again
Once well combined, add the dry ingredients, and mix until it just starts to form a dough
The dough should be semi dry and crumbly, but stick together when you press it together
Cut the dough in half, form into disks, and wrap in plastic wrap
Place in the fridge for at least 2 hours, or overnight
Make the filling*
Heat the oven to 350 degrees F
Take out the dough, roll out into flat rectangles, and spread the filling onto the cookie
Roll the dough starting with one of the long edges into a swirl (if it starts cracking, you can smooth it out easily)
Place in the fridge again for about 2 hours
Take the roll out and cut into 1 inch think pieces and place them on a baking tray
Bake for 10-12 minutes or until just slightly golden brown on the edges
*Filling:
1/2 c vegan butter
1/2 c brown sugar
1/2 c granulated sugar
4 tbsp cinnamon
Directions:
Add the butter to a bowl, and place it in the microwave for about 30 seconds until melted
Add the sugar and cinnamon and mix until well combined
Icing:
1 c confectioners sugar
3 tbsp non-dairy milk
1 tsp vanilla
Pinch cinnamon
Directions:
Mix all the ingredients in a bowl until well combined
Pour over the cooled cookies and enjoy!
