I grew up with these delicious hearty rolls. My dad has always made them, and it was the one of the hardest foods to give up when I went vegan. Thankfully, I quickly realized you can make baked goods vegan pretty easily. So I did. You're welcome. 😉Check out the video and recipe down below!
Recipe
Yeast:
1/2 c Luke warm water
Spoonful Sugar
2 packets Yeast (or two spoonfuls)
In a bowl, combine the water, sugar and yeast. Set aside
Flaxseed Egg:
2 tbsp ground flaxseeds
6 tbsp chilled water
Combine the water and flaxseeds in a separate bowl, mix well, and set aside
Dough:
1/3 c sugar
1 1/2 tsp salt
4 1/2 c flour
1/3 c wheat flour
1/4 c molasses
1 tsp cinnamon
1 tsp nutmeg
1 tsp cardamom
1 tbsp vanilla
1 c vegan butter
1 c plant based milk
Combine the sugar, salt, flour, wheat flour, molasses, cinnamon, nutmeg, cardamom, and vanilla, into the stand mixer, or a big bowl and mix well
Combine the milk and butter in a separate bowl and put in the microwave until the butter is melted (about 2 - 3 minutes)
Pour the milk and butter mixture into the mixer and stir
Add in the eggs, stir
Add in the yeast. (but make sure the dough isn’t too hot or it will kill your yeast)
As you see the dough start to form, add flour in increments
You’ll know when the dough is done, or almost done, when it starts to pull away from the sides of the mixer
Once it does that, take it out and kneed it until the dough is no longer sticky, and can hold it’s shape
Put it in a bowl with olive oil in it, and make sure the entire dough is coated in the oil
Cover the bowl with a dish towel or plastic wrap
Let the dough rest for about an hour or until it’s doubled in size
Preheat the oven to 350 degrees F
Lightly grease two baking sheets
Cut and shape the dough into baseball size rolls
Optional: let the rolls proof for another 15 - 30 minutes
Bake them for 15 minutes, turning them halfway through to ensure an even bake
Get some kind of oil or vegan butter and melt it when the rolls are almost done baking
Take the rolls out of the oven and quickly cover them with the butter or oil so they don’t form a hard crust
Let them cool slightly and enjoy!
Tip: These rolls freeze really well, so you can make a batch and freeze half for later enjoyment!
