Vegan Orange Cookies

The original recipe came from one of my Grandma's cookbooks. We never ate them much as a kid, but I remember LOVING the zesty orange flavor with the sweet sugar. It's a soft cookie with a light zesty flavor. Perfect for any occasion.


1 1/4 c white sugar

3/4 c vegan butter

Cream the sugar and vegan butter together

Add in the rest of the ingredients in the order given then mix it together

1/2 c mashed banana with 1 tsp baking powder

1 c non-dairy milk

3 c flour

1 tsp baking soda

2 tsp tbsp baking powder

Juice & grated rind of 1 orange

Juice & grated rind of half a lemon

Heat the oven to 350 degrees F

Spoon the mixture onto a pan and bake for 10 - 12 minutes(they should be golden brown around the edges)

Heads Up: They will and are supposed to be soft cookies

Let the cookies cool


2- 3 tbsp melted vegan butter

Juice and rind of 1 orange

Juice and rind of half a lemon

Powdered sugar (as much as you need to make it the consistency you want (somewhere between a glaze and frosting)

Mix in a bowl (I highly recommend using a hand or stand mixer) until it’s the right consistency

Glaze the cookies and wa-la! Now you have delicious cookies

Tip: The mixture should be very thin, so don’t worry if it’s runny like pancake batter.
