Vegan Homemade Reese's Peanut Butter Cups... kind of
I know there are a lot of easy recipe's for vegan Reese's Cups, but personally, none of them have been sweet enough. So, one of my goals is to create the closest versions of it. And I'm getting closer.
1 c peanut butter
1/3 c powdered sugar
Mix together in a bowl, set aside
1 1/2 c dark chocolate (or half of a pound bar of chocolate)
1 can or 1 homemade jar of sweetened condensed coconut milk
1 tbsp vegan butter
Break the chocolate up into smaller pieces and put in the microwave for 20 - 30 seconds and mix. Repeat until the chocolate is mostly melted
Add the sweetened condensed coconut milk and vegan butter and put it in the microwave for 20 - 30 seconds until completely melted
Spoon the chocolate into 12 cupcakes liners
Put in the freezer for 5 minutes or until semi solid
Put the peanut butter in the middle and put them back in the freezer for another 2 - 5 minutes or until semi solid
Put the rest of the chocolate on the top and put in the freezer for at least 30 minutes or longer for best results
Tip: This recipe makes 12 regular sized cupcakes liners, so distribute evenly among all 12.
